Strawberry and Peach Delight

Ingredients: 
* Strawberries 10-12 * Peaches 2 medium * Eggs 2 * Castor sugar 3-4 tbsp * Cream 3-4 tbsp * Flour (all purpose) 4-5 tbsp * Vanilla extracts 1 tsp
Preparation Time:

Preparation Method: 
Cut the fruits in big chunks. Spread them on the baking tray. Beat eggs, add cream and sugar. Keep beating. Add vanilla extract while beating. Add flour, one spoon at a time while continously beating. Pour the mixture over the fruits. Bake in a pre-heated oven for 8-9 minutes on 225 deg C The dessert will be set from top but still creamy and liquidy from inside. Serving instructions: Add a scoop of vanilla icecream in the serving bowl. Pour the baked hot delight over the icecream and serve immediately.

Yoghurt Mousse

* Yoghurt 500 gms * Condensed milk 1 can * Jellly 1 packet, flavour of your choice.
Preparation Time:

Preparation Method: 
Tie yoghurt in linen (malmal) cloth till all the water drains out. It might take around 1 hour. It becomes dry creamy texture dough. In a bowl, beat the condensed milk to fluffy mixture for around 10-15 minutes. Add the water drained yoghurt to it and keep beating for another 5 minutes. Prepare your jelly liquid as per the instructions on the packet. Make sure you dont use quick settling jelly otherwise it will become lumps when you'll keep the mousse to set. Now add the jelly liquid when it is at room temperature, to the mixture and beat for another couple of minutes. Pour the mixture in the bowl you want to serve. Keep it in the refrigerator for 2-3 hours or till it sets. Serve topped with fruit jam/sauce of your choice or just plain mousse.

Chocolate and Nuts Cookies

* Peanut Butter 2 tbsp * Baking Butter 2 tbsp (no salt butter) * Sugar 4 tbsp * Self raising flour (or maida) 8 tbsp * Baking powder 1/4 tbsp * Egg 1 medium * Pinch of salt. * Mixed nuts (cashew, almonds, peanuts, etc) * Chocolate chips
Preparation Method: 
Mix peanut butter, baking butter and sugar using an electric beater. Beat it into a smooth paste. Add 1 beated egg to the above paste and beat it for another 5 minutes. Mix the baking powder and salt to the flour. Add the flour to the sugar and butter paste. Fold it into a smooth dough. It will be a bit soft. Mix nuts and chocolate chips. Make 18-20 round balls out of the dough. Refrigrate it for half an hour. Press the balls with fork to make a square design. Bake in a pre-heated oven for 20 minutes.

Raspberry and Peach Dessert

* Raspberry 200 gms * Peach 200 gms * Single Cream 200 gms * Castor sugar 150 gms * Vanilla flavour 1 tsp * Eggs 3 medium * Maida 3 tbsp
Preparation Method: 
Spread raspberry and pealed peach cubes in a breaking tray. Beat cream, sugar and eggs together for 4-5 minutes. Add vanilla flavour and maida. Beat again for 3-4 minutes. Pour the liquid over the raspberries and peach. Bake in a pre-heated oven at 180 degrees for 8 minutes. The dessert will be thick, creamy and delicious. Serve hot with icecream.

Pineapple Halwa...

* Pineapple 1
* Fresh cream 100 gms
* Ghee 2 tbsp
* Dry fruit crushed 2 tbsp
Preparation Time: 
25 min
Preparation Method: 
Grate pineapple. Cook with 1 cup of water on medium heat till all the water evaporates.
Add 2 tbsp ghee and cook till ghee separates.
Add sugar if needed as per your taste.
Turn down heat to very low and add cream. Cook for 10-15 minutes.
Serve medium hot with icecream garnished with curshed dry fruits.

Chocolate Chip Muffins...

* Eggs 2
* Self raising flour 75 gms
* Castor Sugar 75 gms
* Butter (no salt, soft) 75 gms
* Cocoa powder 2-3 tbsp
* Vanilla essence/extract 1 tsp
* Baking powder 1 tsp
* Chocolate chips as per your taste
Preparation Time: 
30 min
Preparation Method: 
Mix everything in a bowl except chocolate chips, baking powder and flour. Beat till it becomes a smooth paste.
Sift the flour and baking powder in the mix. Beat again for a couple of minutes.
Add 3/4th of the chocolate chips in the mix.
Pour them into muffin lined and greased moulds. Sprinkle the remaining chocolate chips on top of muffins.
Bake them in a pre-heated oven for 12-15 minutes at 200 degrees.
Let them cool before serving.

Date Balls...

* Dry dates (khajoor) 20-25
* Milk 1 cup
* Khoya or Barfi 250 gms
* Desiccated cocunut 2 tbsp
Preparation Time: 
1 hr
Preparation Method: 
Soak dates overnight in water.
Chop them into small pieces and cook them with milk till all the milk is absorbed by the dates.
Add khoya/barfi to the dates and cook for 5 mins on medium heat.
Blend everything into a paste. Add sugar if needed.
Make balls and roll them in coconut. Serve chilled.

Badam Phirni/Firni...

* Milk 250ml
* Rice powder 2 tbsp
* Blanced Almonds 12-15
* Sugar 3-4 tbsp
Preparation Time: 
20 min
Preparation Method: 
Soak almonds and rice powder in a cup of water for around an hour.
Boil milk for 10 minutes.
Blend almonds and rice powder into a paste and add it to the boiling milk.
Keep boiling on medium heat till it becomes thickish.
Serve hot or cold garnished with chopped almonds.

Cheese Cake...

Crust:
                                                     * Flaked coconut or marie biscuits - 1 cup.

                                                     * Butter 1/4 cup. *Sugar 1 tbsp
Filling:
* Melted butter 1/2 cup
* Sugar 1/2 cup

* Vanilla extract 1 tsp

* Eggs 4-5
* Cream cheese 200g
m
* Orange juice 2 tbsp
* Whipping cream 1/3 cup

* Flour 1/2 cup
Preparation Time: 
1 hr
Preparation Method: 

Preheat oven to 200 degrees.
Mix crust ingredients together n press into bottom and 1" up the sides of pan.
Bake it for like 5-6 mins in oven.take out n set aside .
Now beat cream cheese with electric mixer.
Add sugar n eggs one at a time, beating well after each.
Add cream, juice, butter and spread the mixture into prepared crust.
Set pan on the baking sheet
and bake for 1 hour or until filling is set.
You can also refrigerate it overnight.
