- 1 bunch palak (spinach);
- 4 cups wheat flour;
- 4 tbsp. gram flour;
- 2 tsp. ginger-garlic-green chilli paste;
- 1 1/2 tsp. ajwain;
- 1 1/2 tsp. cummin seeds;
- 1/4 tsp. turmeric powder;
- salt to taste;
- ghee for deep frying.

Method:
- Wash and finely chop palak. Add a little water and grind it to a paste. Add ginger-garlic-green chilli paste, ajwain, cummin seeds, turmeric powder, gram flour and ghee to the palak mixtue and mix well. Add wheat flour and salt and knead into a hard dough, adding a little water to it, if necessary.
- Divide the dough into small portions and roll out into puris. Deep fry the puris in hot ghee till golden brown. Serve hot with mango pickle or any other pickle
